Winter Squash Casserole

3 cups cooked mashed squash -- Butternut, Acorn, Pumpkin, or other winter squash

3 eggs

1/3 cup sugar

1/3 cup butter or margarine, softened

1/3 cup milk

1 tsp ground ginger

1/2 tsp maple flavoring

•Combine ingredients; pour into a buttered casserole or 9 x 13 pan.

•Bake at 350 for 35 minutes. Sprinkle with Crunchy Cereal Topping and bake 10 additional minutes.

Yield: 6 to 8 servings.

Crunchy Cereal Topping

3/4 cup crushed corn flakes

1/3 cup brown sugar

1/4 cup meltedbutter or margarine
•Combine all ingredients in a bowl.
